More Information - Krone Borealis Cuvee Brut

The scent of ice, the resin of pine needles. Taste the snow of the 2022 growing season, the granite of the mountains. The sea washes in; oyster shell and salted breeze. Fresh green apples, lemon balm and white peach skate through. The palate is light, floaty, the spine mineral and cool, the satiny mousse expanding from this , curvaceous and mouth-coating. Red apples and a hint of icy berry at the core shows the exquisite harmony between the chardonnay and pinot noir, forever in concert. The long, cold winter shaped a crystalline acidity, intricate and radiating towards the edges, like a snowflake itself. Extended lees time (18 months) and a lower level of tirage layers on autolytic biscuity intensity, a sensation of fynbos honey promises positive evolution as the wine continues to mature in bottle.

Back Story & Wine Information

The making of vintage-only Krone Cap Classique is directed by nature: from soil to vine to bottle. Our winemaking team channels the rain, the sun, the wind into structure, complexity and balance—and seals it all with a cork. The site-specific rocky soils of Tulbagh are like nowhere else in the Cape Winelands. Family-owned, the Rands family purchased the farm in 2012. Brother and sister, Svend and Abigail are involved intimately in all aspects of the estate, from vineyard plantings to marketing. Cellarmaster Rudiger Gretschel leads the winemaking division, a renowned Cape winemaker he pours his considerable knowledge into both the viticulture as well as the vinification, working seamlessly alongside Cap Classique specialist and head winemaker Stephan de Beer.

Pairing
Our flagship Cap Classique evokes a sense of discovery in dining—in a pure and simple way; such as mussels steamed open with seawater; with its distinct line of salinity, the Borealis elevates the oceanic. Minerals and earth; salt-baked; creamy porcini risotto. Simmering comforts of braising chicken, texture and spice.
