Back Story & Wine Information

The story of Creation is as old as the hills – dating back to when Mother Nature created our lofty mountain slopes and undulating valleys, bestowing upon them exceptional winegrowing conditions. At the same time our story is as young as our state-of-the-art winery and as vibrant as our inspired team who contribute their passion and expertise to create a unique and authentic, terroir-expressive experience.

Pairing
Seafood and Fish: Excellent with grilled fish, salmon (especially beetroot-cured salmon), raw fish dishes like sashimi or fish crudo, shrimp, and scallops. Salads and Vegetables: Pairs well with fresh salads, especially those with a vinaigrette dressing. Grilled vegetables and Mediterranean vegetables are also great options. Cheeses: Suitable for young and semi-firm cheeses like fresh mozzarella, feta, goat cheese, baby Swiss, or young cheddar. Avoid very pungent cheeses that might overpower the wine. Poultry and Meats: Works with delicate poultry like roasted chicken or turkey breast, as well as lighter pasta and rice dishes. Spicy Cuisine: The wine's acidity can help balance the heat in spicy dishes like Thai or Indian curries.
