More Information - Babylonstoren Cab Sauv

This complex, full-bodied red wine is a stellar choice fit for any celebration or slow sipping. Grapes are hand-selected from eight different vineyard blocks, then matured in a combination of 40% new and 60% second- and third-fill 300-litre oak barrels for 18 months. It is bottled and further matured for three months prior to release.

Back Story & Wine Information

The story starts in 1692 as a historic wine and wheat farm in South Africa, named for its hill, “Babylon’s Toren,” reminding early settlers of the Tower of Babel due to diverse languages. Acquired by new owners in 2007, it underwent a major restoration, transforming its authentic, historic Cape Dutch farmyard and buildings into a modern luxury hotel, winery, and renowned botanical garden, blending deep history with contemporary design and a farm-to-table ethos.

Pairing
• Red Meats: Prime ribeye steak, char-grilled cheeseburgers, or slow-braised beef short ribs. • Lamb: Grilled or slow-cooked lamb seasoned with fresh rosemary and thyme, or fire-roasted lamb loin. • Game & Poultry: Roasted duck or venison. • Cheeses: Mature cheddar, aged gouda, Parmesan, or creamy blue cheeses like gorgonzola.
