Time – The lost element in today’s winemaking, can be so precious – yet it is free. It was our desire to produce a Bordeaux Blend and so we planted the classic varieties of Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot. These vines were planted on carefully selected sites and took 9 years to reach a level of maturity which we felt comfortable to use for the maiden vintage (2001).

  • Sommelier Wine Awards: The 2015 vintage won a Silver Medal in 2024. Critics praised its “well managed tannins,” “pyrazine character,” and “stunning fragrance”.
  • James Suckling: Gave a positive review to the 2019 vintage.
  • Tim Atkin: Has consistently rated the wine highly in his reports. He awarded the 2016 vintage 88 points.

The grapes were fermented whole with native yeasts (true to our ancient custom) and left for 5 weeks on their skins. A slow 2 years of barrel maturation followed and a further 4 years of bottle maturation. Finally, we released this wine rich, classic and complex from age – of vines and wine. This long wait, justified only by our passion, does bear fruit. It’s called-“The Work of Time”. AWARDS

Back Story & Wine Information

The dream: The project began with the dream of creating a classic Bordeaux-style blend, and it took nine years for the vineyards to mature to a point where the family felt they could begin the winemaking process. The aging process: The wine is aged for up to two years in French oak barrels and up to four years in the bottle. The name: The “Work of Time” is a testament to the patience and time required to produce the wine. The result: The finished product is a complex, rich, and elegant wine that reflects the character of the grapes and the terroir.

Red meat Steak: Sirloin or rump steak are excellent choices. Lamb: Grilled or roasted lamb, including lamb shank. Game: Venison is a classic pairing. Beef dishes: Beef bourguignon and other rich, slow-cooked beef stews are ideal. Other main courses Hearty stews: Duck, beef bourguignon, or rich stews work well. Spiced dishes: Consider savory curries or spiced tomato-based dishes. Richly seasoned fare: The wine can stand up to complex and flavorful dishes.
